HONEY DILL ROASTED CARROTS
Anyone looking for a new recipes to try for this Thanksgiving?! This non starchy veggie side is packed with flavor, fiber, and helps you continue to meet those health goals throughout the holiday season. It’s SIMPLE!
1 bunch @twisted_river_farm fresh carrots
2 Tbsp olive oil
1 Tbsp local honey
1 Tbsp fresh dill, chopped
1 Tbsp fresh parsley, chopped
1 pinch salt
1. Preheat the oven to 375 degrees and spray a baking sheet with oil.
2. Wash and trim carrots well, peel if outsides are rough and covered with dirt after washing. Slice each carrot in half lengthwise. Place the carrots on the baking sheet.
3. Mix together oil, honey, herbs, and pinch of salt in a small jar and drizzle over all carrots. Toss well.
4. Place carrots in the oven and roast for about 20-25 minutes. Serve immediately!
