CHEESY EGGPLANT

I’m all about these garden fresh, fall veggies! The best challenge is trying to make them take on comfort food feeling and this recipes does just that!

1 medium/large eggplant, sliced in 1/2 inch rounds

1/2 cup sharp cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded

1/4 cup Parmesan cheese, shredded

2-3 tbsp mayonnaise

1 clove garlic, minced

1/4 tsp salt

1. Preheat oven to 400 degrees & spray a baking sheet with oil.

2. Mix all cheese, Mayo, garlic, & salt into a bowl.

3. Slice eggplant and place onto baking sheet. Top each slice with the cheese mixture, spreading evenly on each slice.

4. Bake in the oven for about 15-20 minutes until cheese is melted and golden brown. Serve immediately!
